Having a picnic in the shade is the best bet so your food can stay fresh. You also want to pick a spot that has a grassy area so you can put a blanket down. Be careful to watch out for ants and other critters before you put your blanket down.

Plan Your Menu

When it comes to planning a picnic your menu should not be complicated. Some suggestions are fried chicken, cold sandwiches, fruit, salads and various desserts such as brownies and cookies. It is important to also have a lot of beverages because of the heat.  It is essential to make sure that you do not bring food that melts easily because it will cause a mess. Even if you are bringing juice or lemonade it’s important to bring water for everyone as well.

Ward off Pests and Use Sunscreen

Bug spray is very important when it comes to a picnic. You should use bug spray and bring things to cover your food. You should also bring garbage bags to throw away your food when you finish eating. It is also important to bring sunscreen to protect yourself from the sun. The minimum recommended SPF rating is 30 when you are planning on spending time outdoors. However, I personally use 50+ because I am very fair, it can’t hurt!

Are you are looking for a great way to prepare a pizza? You are really missing out if you have not tried using a pizza stone. Also, while some might be intimidated by a pizza stone is actually simpler than you think. Here are some simple tips and information for using a pizza stone, from DealDash.

Be Sure to Pre-Heat

Firstly, depending on where you have purchased your stone you are going to want to preheat it. It will not hurt the pizza stone and will actually help to better prepare the food that you are cooking on the stone. Just place the pizza stone in the oven when it is at the same temperature as the kitchen then preheat it. Please don’t put the pizza stone in the oven if it has been sitting somewhere colder than room temperature such as the fridge. This can cause the stone to crack.

After it has been preheated you can take it out of the oven, place the food on it, and prepare as directed. Also good to note – you can prepare other food on it than pizza. If you can bake it, you can use a pizza stone on it. Additionally, it can be easier to clean than a baking pan.

Season it With Oil

It’s rare for foods to stick to your pizza stone. However, you will want to be sure to season it using cooking oil. Also, you should repeat this practice every few times that you make use of the pizza stone. Additionally, you also do not want the stone to change temperature too quickly. This can cause the stone to crack.

Next, it is also not recommended to clean your pizza stone with soap and water. Reason being, this will cause soap to collect in the stone. Simply put the stone in the oven to bake off the food you prepared on it. Next, scrape off the food particles and re-season the stone. This will keep your pizza stone clean and sparkling.

DealDash Recipe: Snack Mix Chicken

Snack mix chicken is a fun and easy recipe that’s great for summer. You can throw this together quickly then get back to bidding on DealDash!

Have you ever tried snack mix chicken? It’s delicious, crunchy, and healthier than a heavily breaded and oiled fried chicken. It’s so fun to make that the kids or grandkids might even volunteer to help you make it. And if there’s any snack mix left, well…

Ingredients

  • 1 Cup melted butter
  • 4 Cups pretzel snack mix, crushed. You can use the name brand Chex Mix or the generic store brand, it doesn’t matter.
  • 5 Pounds chicken pieces – legs, thighs, etc.

Directions

  1. Preheat oven to 375 degrees F.
  2. Line a 15×10 baking pan with aluminum foil
  3. Place melted butter in a shallow dish
  4. Fill another shallow dish with the crushed snack mix
  5. Remove skin from all of the chicken pieces
  6. Dip chicken in butter to coat; then dip in snack mix, coating evenly
  7. Place chicken in prepared pan
  8. Bake your coated chicken pieces for 50 minutes

Tips to Make this Recipe Easier

This recipe is super easy to make, but there are a few things that you can do to make it even easier. For starters, the easiest way to pulverize the snack mix is in the food processor. If you don’t have a food processor you should make it your mission to win won on DealDash. Otherwise, you can double-bag the snack mix in gallon freezer bags and use a rolling pin on them.

Another thing to make this recipe even easier is to use the “shake and bake” method. You can put your crushed snack mix into a large gallon freezer bag, place each butter-coated piece of chicken into the bag, zip it, and shake. So simple and easy!!

It’s apple picking season here in New England, and what better use of apples than applesauce?

Now that I have two kids in school I have received a bounty of freshly picked apples – pretty much every kid in school around here goes to apple picking at a local farm for a field trip at this time of year. Eating apples raw is delicious, of course, but it can get a little tiring after a while, and if you’re like myself the last ones in the bag go uneaten and get thrown away. Applesauce is the cure for your uneaten apple problem! It’s easy to make, delicious, and keeps for a while in the fridge after you have made it. It great for adults, kids, and even babies can eat it as well. It’s a wonderful high-fiber food that you can enjoy anytime, from breakfast to dessert. It’s time to learn how to make applesauce.

Ingredients:

  • 6 (approximately) of pounds Apples
  • 1 cup Apple Juice Or Water
  • Juice Of 1 Lemon
  • 1/2 cup Brown Sugar, Packed
  • 1 teaspoon Cinnamon, More Or Less To Taste

Directions:

  1. Peel and core Core the apples
  2. Cut Into slices – 8ths is great
  3. Combine all ingredients into a large stock pot and cook over medium heat, stirring occasionally, for 20-30 minutes.
  4. You can mash this up with a potato masher for a chunky applesauce or…
  5. Puree in a blender or food processor until it has reached the applesaucy texture that you desire.

Wasn’t that easy?? This is a great project to do at home with the kids that takes a minimum of time and effort and yields a delicious snack that you can all enjoy together when it’s done. DealDash Cooks: Boba (Bubble) Tea

Bubble Tea is one of my favorite drinks. I crave it. Luckily, it’s easy to make at home.

Bubble tea is originally from Taiwan, it was created in the 1980s. Eventually it’s popularity spread throughout Asia, then across the world. My favorite bubble tea is the type with boba tapioca pearls, but bubble tea can also be made with small cubes of jelly, or you can even just make the regular Thai iced tea without any sort of bubbles.

You can add the boba bubbles to just about any drink, but they are typically added to either Thai iced tea or any number of different fruity-type drinks. Some of my favorites are mango and grapefruit, but they are all delicious. Here is a quick and easy recipe to get you started. After you have mastered this recipe, then branch out to different types of bubble drinks. Just a hint, though, if you’re not sure if it will taste good with the boba added, then just mix up a very small amount, enough for just a couple of sips. Otherwise you might waste your precious, precious boba!

Thai Iced Tea

Ingredients: 

  • 1/4 cup dried boba tapioca pearls per serving (NOT quick-cooking boba)
  • 2 tea bags, any kind, though I prefer black tea
  • 1/2 cup water
  • 1/2 cup sugar
  • Sweetened condensed milk
  • Ice

Directions:

  1. Bring 2 Cups of water to a boil over high heat. Add 1/4 Cup of boba and lightly stir until they start floating to the top of the water.
  2. Reduce heat to medium and simmer the boba for 14 minutes. Remove the pan from the burner, cover, and let the boba sit for another 14 minutes.
  3. If you are planning on eating/serving them all in one sitting you can skip this step. While the boba are simmering, make a sugar syrup to sweeten and preserve them after cooking. Bring a 1/2 Cup of water to a boil over high heat. Remove from heat and stir in 1/2 cup sugar until dissolved. Set aside to cool.
  4. Make a cup of strong tea, then let cool.
  5. After the boba have cooked, drain the water off. Let cool until boba are room temperature, at least 15 minutes, or refrigerate until ready to use. Boba are best if used within a few hours of cooking, but will keep refrigerated for several days. If you plan on keeping these boba for a few days, please refrigerate them in the sugar syrup in Step #3.
  6. Pour the prepared tea over ice into a glass and add the boba as well as the sweetened condensed milk.
  7. Enjoy!

DealDash Cooks: Sweet Potato Fries

Image result for sweet potato fries Sweet potato fries that are made in the oven taste great and are a lot healthier for you than regular fries. Luckily, they are easy to make as well.

Have you ever had sweet potato fries? I first tried them a few years ago, and I was hooked. When I learned how easy and quick they are to make at home they became a regular staple around our house. Here is a fast recipe, but of course you can add any other seasoning that you would like to them such as truffle oil, Himalayan salt, etc.

Ingredients:

  • 1 large or 2 medium sweet potatoes
  • 2 teaspoons canola oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper

Directions:

  1. Preheat oven to 450 °F
  2. Peel your potato and cut into thick wedges
  3. Toss sweet potato wedges with oil, garlic powder, salt, and pepper.
  4. Spread the wedges out on a baking sheet that’s been lightly sprayed with oil/Pam
  5. Bake for 10 minutes
  6. Turn, bake an additional 10 minutes or until browned

Wasn’t that simple? If you would like to get even more creative, you can make “fancy” ketchup to go with your own fries. If you would like to make a spicy ketchup you can add in a little Sirracha sauce, or you can even dip these in BBQ sauce or ranch dressing.

Sweet potatoes are extremely versatile, and are loved by a huge portion of the population. People love them for a good reason,  sweet potatoes have vitamin A and they are delicious! What’s not to love?

If you would like your sweet potato fries to be crispier, cut them into thinner strips instead of the big wedges, and try cooking them on top of a baking rack instead of on a baking sheet.

Veggie spiral slicers have been all the rage this past summer, and making zucchini noodle “pasta” has never been easier. Here is a delicious recipe for Zucchini “Pasta” with meatballs.

I never thought that I would be a supporter of zucchini pasta, but here we are in 2016, and I am here to say that it’s pretty good! If you are trying to get healthier and are counting carbs, then zucchini pasta is the way to go. It’s significantly easier to make zucchini pasta with a spiral veggie cutter than making it by hand, but you can use whichever method that you feel comfortable with. And FYI, those spiral veggie cutters are very affordably gotten at Bed, Bath, and Beyond. Don’t forget to use your 20% off coupon that you can find on their website, as well as using a Bed, Bath, and Beyond gift card from DealDash!

Ingredients:

  • 1 lb. ground beef (I like the 97/3, but use whatever you like)
  • 1/4 Cup Italian seasoned dry breadcrumbs
  • 1 egg
  • 1/3 Cup Parmesan cheese
  • 1 Cup Provolone cheese, grated
  • 10 grape (or cherry) tomatoes sliced in half
  • 2 garlic cloves, cleaned and minced
  • 2 Tbs extra-virgin olive oil, divided
  • 1 jar tomato pasta sauce (I like Ragu Super Chunky Mushroom, myself)
  • 1 can mushrooms (drained)
  • 4 medium zucchini, cut into noodles
  • Salt and Pepper

Directions:

  1. Combine beef, breadcrumbs, egg, Parmesan, approximately 1 garlic clove, and 1/2 teaspoon each salt and pepper in a bowl. Form into 12 –  2″) beef meatballs.
  2. Heat 1 tablespoon oil in a large skillet over medium heat. Add beef meatballs and cook, turning occasionally, until brown on all sides, approximately 5 minutes.
  3. Reduce heat to medium-low and gently stir in pasta sauce and mushrooms. Simmer, turning meatballs occasionally, until meatballs are cooked through, approximately 15 minutes.
  4. While sauce is simmering, heat 1 Tbs oil in a medium skillet over medium-high heat. Add zucchini noodles, tomatoes, and remaining minced garlic and cook until just tender, approximately 3 minutes. Season with salt and pepper.
  5. Serve meatballs over noodles topped with Provolone and Parmesan cheese.

Yum, yum, yum! I am getting hungry just thinking about it. You can also add a nice side salad with Italian dressing to this, and make it a great meal. DealDash Cooks: Hot & Sweet Pork

Some sweet and spicy pork sounds delicious for dinner tonight. This recipe is delicious and also low in fat and calories.

Before I became more interested in cooking, whenever I heard “pork” I immediately thought “fattening.” Surprisingly, though, 3 ounces of pork is only around 200 calories. I am a big eater, though, so I probably eat twice that as a serving size. However, ounce for ounce it’s very similar to chicken, which I have always thought of as low in calories. This recipe has around 400 calories per serving, and around 13 grams of fat. Even more important than that, though, it’s delicious.

Ingredients:

  • 2 pork tenderloins with a combined weight of around 1.5 pounds
  • 1 can of Mandarin oranges
  • 1 medium red onion, cut into chunks
  • 1 can of pineapple chunks
  • 3 Tsp olive oil
  • 1/4 cup ketchup
  • 1/4 tsp chili powder
  • 1/4 Tbs garlic powder
  • 1/2 cup cilantro
  • juice from 1/2 a lime
  • salt and pepper to taste

Directions:

  1. Preheat oven to 425 degrees
  2. In a bowl, coat the mandarin oranges, pineapples, and onions with 2 Tbs olive oil (saving 1Tbs for later)
  3. Take half of the bowl contents and roast them for 10 minutes on a baking sheet
  4. In a small bowl, combine the ketchup, garlic powder, and chili powder
  5. Heat the remaining 1 Tbs of olive oil in a pan, and brown the pork loins (about 7 minutes) salt and pepper to taste
  6. Add the pork to the baking sheet with the roasted oranges, pineapple, and onion, then pour the ketchup mixture on the top and roast for about 16 minutes.
  7. Toss the remaining unroasted  oranges, pineapple, and onion with the lime juice and cilantro, serve with the pork.

I personally would serve this on top of a bed of white rice, but you could also just serve it as-is, it’s your choice. This is a quick, easy, and healthy dinner that everyone can enjoy. I hope you like it!

DealDash Feeds the Baby

As the mom of a 6 month old I am just starting to feed him baby food. It’s the messiest!

I am working on some ways to help keep the mess to a minimum. The first one is to stop using baby wipes on his face and hands! They just don’t work that well, smearing the food around rather than wiping it off. I bought some good quality bamboo baby wash cloths and use those during mealtimes instead. It seemed that the baby wipes were irritating his skin, and it’s much better since switching to the wash cloths.

A good high chair is helpful for trying to keep the mess at bay. The Graco DuoDiner 1 High Chair (pictured below) is great because the seat pad is wipeable or machine washable, depending on how messy that particular meal was. I was surprised to find that not all high chair pads are machine washable! Speaking of cleaning, the dishwasher-safe, pull-out insert makes clean up hassle-free. I personally try to just wipe everything down as soon as I’m done feeding the baby so nothing gets all caked on and yucky. The insert makes it quick and easy. Another thing I would like to do is to start making my own baby food. It might not make things less messy, but at least I would know exactly what I was cleaning up! I’ve never tried to make baby food before, but from doing some reading it seems that you just need a food processor. DealDash Cooks: Chicken With Egg Noodles

Slow cookers are usually associated with cold weather foods like stews and pot roast, but here’s a delicious meal that’s just perfect for any kind of weather.

I always hate putting away my slow cooker for the spring and summer seasons. Slow cookers make life so much easier by helping you make delicious home cooked meals without spending too much of your valuable time in the kitchen. I’m always on the lookout for recipes that allow me to use my slow cooker for a seasonally appropriate meal.

Below is a delicious recipe that has become a staple in my household in any season. Even the pickiest kid will eat it, and that’s saying something!

Ingredients:

  • 8 oz. egg noodles
  • 1 pound of chicken legs and thighs, skin removed
  • 1 cup low-sodium chicken broth
  • 4 slice thick-cut bacon (about 6 ounces)
  • 1/2 c. dry white wine
  • 1/4 c. flour
  • 1 tbsp. tomato paste
  • salt & pepper (to taste)
  • 3 medium carrots, cut into 2-inch pieces
  • 1 cup frozen pearl onions
  • 3 clove garlic, peeled and smashed
  • 2 stalks celery cut into 2-inch pieces

Directions:

  1. Microwave the bacon between sheets of paper towels until cooked through, then cut into 2 inch pieces. If your family loves bacon then double the amount.
  2. Using your slow cooker, combine the wine, flour, tomato paste, salt (to taste), and pepper (to taste). Then using a whisk add in the chicken broth. Next, add the celery, carrots, onions, garlic, and bacon. Whisk until combined.
  3. Place the chicken in the slow cooker, meat (not bone) side down. Cook in the slow cooker approximately 3 to 4 hours on high or 5 to 6 hours on low.
  4. Just before dinner, cook the bag of egg noodles in salted boiling water until al dente. Transfer 1/4 cup cooking water to a skillet. Stir in olive oil, a squeeze of lemon juice, and salt and pepper (to taste).
  5. Serve chicken and veggies on top of the egg noodles.

This meal should only take about 30 minutes to prep, and then it can cook while you are at work, running errands, or bidding on DealDash all day! This is a wonderful meal that can be paired with a Pinot Grigio wine if desired.

DealDash Recipes: Homestyle Meatloaf

My kids might not agree, but I think that meatloaf is delicious! I am definitely not the best cook that I have ever met, but I have to brag a little when I say that my meatloaf is delightful.

Now that we are into the full swing of summer a lot of the local supermarkets around me are having really great sales on ground beef assuming that people are going to buy it to grill hamburgers. It’s only July and I am already a little tired of burgers. Let’s take that ground beef and turn it into yummy meatloaf.

Ingredients:

  • 1.5 pounds of ground beef (or turkey, or pork, or a combination)
  • 1 slice of stale (or lightly toasted) bread very finely chopped into breadcrumbs
  • 1 egg
  • 1 very small white or yellow onion, chopped finely
  • 5 tablespoons ketchup
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/3 teaspoon pepper
  • 1/2 cup of milk

Directions:

  • Combine all meat loaf ingredients
  • Form into loaf shape
  • Place into a loaf baking dish
  • Bake at 350 for 60-80 minutes, until done

Some people like to add additional ketchup to the top of the meatloaf for the final 15 minutes of baking. You can do this, or you can make a simple sauce to serve on top of the meatloaf when it’s served. You can make a sauce out of 3 Tablespoons brown sugar, 3 Tablespoons  apple cider vinegar, and 1/2 cup ketchup. Delicious!

This Homestyle Meatloaf recipe should serve about 4 adults, but if you are having a family dinner with the grandparents or the aunts and uncles it’s a very easy recipe to double and make two separate loaves and bake them at the same time. This Homestyle Meatloaf also goes wonderfully with homemade mashed potatoes and corn on the cob. Yum yum!

Most people would agree that eating dinner as a family is important. However, with today’s busy schedules it’s hard to find the time.

With all of the soccer games, one or both parents working late, and tons of homework it’s hard to eat dinner together. However, since it’s important you and your family should schedule family dinner on your calendars at least once per week, but preferably more. Write it in on the calendar just as you would any other appointment, and stick to it!

Preparing dinner, setting the table, and cleaning up after dinner should not be left for one person to do. Ideally everyone would work together to prepare dinner, set things up, and clear it all away and wash the dishes. Or if your family is planning on doing regular weekly family dinners then it might make more sense for you to pick one or two people to be responsible for everything one week, and then swap the next week. After all, they will have their own families to take care of one day.

Finally, when the dinner is on everyone’s plates don’t just eat and ignore each other, share your day. Ask questions about other family member’s days. Discuss future plans together, brainstorm answers to problems, get to know what’s going on in each other’s lives. Children and teenagers who feel like their parents really listen to them are less likely to get into trouble because they want their parents to be proud of them, they don’t want to be a disappointment. It’s important, trust me.
